Brian Mellor is an award winning Master Chef of Great Britain, former Head Chef at BBC and Executive Chef at Granada TV. He has been involved in almost everything to do with food from cooking privately for celebrities and royalty to overseeing dozens of chefs in busy restaurants.
The exclusive news for this year is that Brian has opened a cookery school in Cheshire, North-West in the old Harthill Village School. Built in the 1800’s, it has magnificent panoramic views across Cheshire and Wales, being just a few minutes away from Bolesworth Castle with other two famous neighbours: Beeston Castle and Peckforton Castle.
The grade II listed building has been carefully renovated to retain its character and keep its place at the heart of the community: a place for learning, meeting artisans and discovering tastes.
Brian Mellor's Cookery School in Cheshire is a vibrant centre for professionals and public to indulge their passion for food, or indeed those taking their first tentative steps into the kitchen. As well as his own experience, Brian has enlisted the help of his expert colleagues to run cooking classes – so expect an enthusiastic influx of chocolatiers, artisan bakers, cheese makers, game keepers and the like for hands on sessions and demonstrations! Not to mention the link with nationally acclaimed nutritionists and dieticians.

Albert Sauce
Combine 300 ml chicken stock with 150g horseradish freshly grated (or 200g bottled but well drained). Boil until reduced by one-third.
Add 300ml double cream and let bubble until reduced. Blend and sieve then add 50g white breadcrumbs. Cook over a low heat for 10 min.
Turn off the heat and add 1 egg yolk and 1 tsp English mustard. Vigorously whisk the sauce to make it smooth. Add salt and pepper. Serve alongside light roasted meats.
